Generally speaking, legumes are great, but lentils are probably easier to digest and prepare than other legumes. They contain fiber, potassium, folate (essential for preventing early embryonic defects), iron, zinc, thiamin and magnesium.

The iron contained in legumes is easier to absorb, though it comes in smaller amounts than in meat.
