This salad is loaded with vitamin C and antioxidants. It is delicious and so refreshing in summer!
Ingredients:
- 1 medium-size seedless orange; peeled and sectioned, then sliced and cut into chunks
- 1 tbsp. pulp-free orange juice
- 1 tbsp. extra virgin olive oil
- 1/2 tbsp. white wine vinegar
- 1 tsp. walnut oil
- 1/4 tsp. orange peel, grated
- 1/2 medium-size head radicchio, torn into bite-size pieces
- 1/2 bunch arugula, washed and ends trimmed
- 1/8 c. walnuts, toasted and chopped
Instructions:
1- To begin, place walnuts in a pan over medium-high heat and toast walnuts.
2- Using a sharp knife – peel orange and cut away the white pitch. Cut oranges crosswise into 1/4-inch thick slices and then cut each slice in half. Set aside.
3- In a medium-sized mixing bowl, whisk together orange juice, olive oil, vinegar, walnut oil and grated orange peel. Season with salt and pepper.
4- In a separate large bowl, combine radicchio, arugula and orange slices in a large bowl. Add vinegar; toss to coat greens.
5- Place in salad bowl and sprinkle with 1/8 c. chopped toasted walnuts.
